This classic dressing is easy to make at home. If you don't like anchovies, just leave them out. The dressing is still delicious without them.
1 organic egg yolk
4 anchovy fillets
1 teaspoon Dijon mustard
1 tablespoon red wine vinegar
Juice from 1 lemon
1 small shallot, chopped
1 clove of garlic
1/2 cup olive oil
1/2 cup fresh Parmesan cheese, grated
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sea salt, or to taste
Blend all ingredients in a high-speed blender. Toss with chopped Romaine, croutons, and more grated Parmesan for a classic salad.
